I always have overripe bananas. If I don't buy bananas, it's the kids favorite food and they keep asking me for them. If I buy them, they eat 2 and the rest sit on the counter. When I offer them, Maci will tell me that she forgot, she doesn't like bananas anymore, she likes apples. (I'm not kidding)
I had to quickly figure out the perfect banana bread recipe that is easy to whip up and easy to double because I always make enough for my family and friends. My friends will tell you that if they drop by my house, there's always banana bread and coffee for them to snack on.
What you'll need:
-3 overripe bananas mushed with a fork
-1 stick of butter
-2 cups of brown sugar
-1 cup of milk (I use Aldi unsweetened vanilla almond milk)
-3 cups flour
-1 tsp vanilla
-1tsp baking powder
-1 tsp baking soda
-1 Tbsp pumpkin pie spice
-1/2 chopped walnuts
-Preheat oven to 350 degrees
-Cream butter (I use a stand mixer or hand mixer)
-Add eggs, brown sugar, milk, vanilla
-Add flour, baking powder, baking soda, pumpkin pie spice
-mix until well incorporated
-fold in walnuts
-Pour into your favorite baking dish
-Bake on the 2nd to lowest rack, 25 min for muffins, 1 hour for loaf pans
