Recipes to Share: Orange Cranberry Muffins

I made these orange cranberry muffins a few days ago and posted a picture of them on Instagram. I got lots of questions about the recipe and I'm happy to share it. I also got questions about making things from scratch. If you keep basic things handy like butter, sugar, eggs, milk, vanilla handy, you can make a lot of things at a moment's notice without having to go to the store. Most people only make these muffins during the holidays but I think they're perfect for spring. They make a perfect little snack with tea and they look beautiful so you'll definitely want to share them with friends and family. Enjoy!

 

Ingredients: (this recipe yields 12 standard size muffins)

 

 

 

2 cups all purpose flour

3 tsp baking powder

1 tsp salt
½ cup sugar
1 heaping teaspoon orange zest
1 cup yogurt (you can use plain or vanilla)
½ cup vegetable oil
2 eggs beaten
½ cup sweetened dried cranberries

Pam for baking (you can butter and flour your pan if you prefer)


Topping- Don't skip this, it's delicious! 
1 tablespoon cold butter
1 tablespoons flour
2 tablespoons sugar


- Preheat your oven to 375 degrees F

- In a bowl, combine flour, baking powder, salt, sugar and orange zest. 

- In a separate bowl, combine yogurt, vegetable oil, and beaten eggs

- Create a well in your dry ingredients by mushing mixture to the sides of the bowl

- Pour wet ingredients into the well of dry ingredients

- Combine with a spoon until just moistened, do not over mix

- Add cranberries and gently fold them in

- In a small bowl, combine cold butter, flour and sugar

- Use a pastry cutter or fork to cut the butter until the mixture is crumbly

- Spoon batter 2/3 full into a muffin tin

- Sprinkle topping mixture over each muffin

- Bake for 20-25 minutes or until golden brown

- Remove muffins to a cooling rack and serve
